Serves 4 as a side, 2 as a main



  1. In a food processor, process lemon juice and tahini for 60s, scrape the sides, then process an additional 30s.
  2. Add garlic, olive oil, cumin, and a pinch of salt, and process an additional 60s.
  3. Add half of the drained chickpeas, process for 60s, then scrape the sides.
  4. Add the remaining chickpeas, process for an additional 60s.
  5. Add aquafaba as required and continue processing until smooth.
